- Put the shredded lettuce over one third of each of 2 plate. Top with the cucumber and arugula / rocket..
- Slice the tomatoes across the top with a sharp knife and place in a bowl. Pour over boiling water. Remove the tomatoes one by one and remove the skins then cut in half..
