- preheat oven to 200
- cover with clingfilm and chill for 30 minutes
- remove clingfilm from pastry and line with greaseproof paper and baking beans and bake blind for 15 minutes, remove paper and beans and put back in oven for 7 mins.
- Chop up sundried tomatoes and put on pastry base then crumble over feta cheese.
- break 3 eggs into a bowl add cream and salt and pepper, mix till combined
- pour into base covering tomatoes and feta. sprinkle over grated cheese.
- bake in oven for 25mins at 180 or until it feels just set in middle.
- serve with fresh crusty bread and salad. delicious hot or cold
