Let it rest for 5 to 7 minutes, loosely covered, before carving between the ribs.
Using the back of a spoon, spread the mustard evenly over all sides. Season lamb on all sides with salt & pepper. Combine bread crumbs & Parmesan in small bowl. Heat cast iron (or nonstick) skillet over med-high heat. Spread the dijon evenly over all.
