The ingredients needed to make Vegetable Fried Rice:
- Get Day old white rice, (I allow 75g dry weight per person as main),
- Prepare 4 eggs, beaten,

- Make ready 4 spring onions, finely chopped, into rings,
- Prepare 1 inch fresh ginger, chopped very finely,

- Take 1 pinch table salt, to season,
- Get 1/2 tsp MSG (optional),
- Take Neutral cooking oil, such as rapeseed
You can serve it as a side dish or it can be a stand alone meal. I designed this recipe to work well in a regular skillet (preferably cast iron), since most of us don't have woks at home. The only tricky part, which really isn't so difficult, is to cook the eggs, vegetables and rice separately, and combine them all at the end. Fried rice is a great way to use up leftovers, but there's no reason you can't use a batch of freshly cooked white rice instead.
Steps to make Vegetable Fried Rice:
- Heat the wok until really hot then add in a touch of oil and the eggs. Move towards the centre of the wok until set then chop into small pieces. Set aside the cooked egg pieces in a bowl for later.
- Add more oil to the wok and then add in all of the veg and the ginger but NOT the garlic. Season with the salt and add the MSG. Stir fry for around two minutes. Add in garlic now and fry for 20 seconds moving around the wok until fragrant the add the cooked rice and toss everything together well.
- Add the light soy sauce. Toss everything together to fully incorporate the soy and coat the strands of rice. Re-add the cooked egg and stir through well. Stir fry for another minute or so then remove from the heat. Serve up and enjoy! :)
This recipe produces vegetable-studded fried rice with individual grains, lightly seasoned to allow the flavor of the rice to shine. Add the onion, carrots and green pepper and fry for a minute. Then add in the mushrooms and peas. Once done, place the vegetables in a dish and put to one side. Push all of the cooked vegetables to the side of the pan.
