Steps to make Special Pilau Rice:
  1. Dice up the onions and garlic cloves.
  2. Heat up pan with olive oil. Add onions on low heat and cook until soft, not brown, stirring regularly. Add garlic and cook for 5 minutes.
  3. Add in all the spices and fry for 2 minutes, while stirring.
  4. Add rice (rinsed) and stir in.
  5. Add stock and boiling water mixture and bring to a boil. Then reduce and simmer uncovered for 7 minutes.
  6. Transfer to ovenproof dish if you need to. Cover with lid and place in the oven at 100 C for 20 minutes.
  7. Fluff rice with fork and remove cardamom pods before serving.

Short-grain rice is sticky when cooked and best used to make sushi, and medium-grain is best to use in making risotto. Make the side dish extra special with this rice dish.
