  1. Get 70 g self-raising flour
  2. Use 65 g plain flour
  3. You need 2 tablespoons coconut sugar or brown sugar
  4. Take 1 teaspoon baking powder
  5. Get 1/2 teaspoon fine salt
  6. You need 1 egg
  7. Take I medium sized very ripe banana, mashed

  1. In a large mixing bowl, sift all the dry ingredients together.
  2. In another bowl, mix the wet ingredienta together.
  3. Add the wet ingredients into the dry ingredients and fold until jist combined. Do not over mix. Cover and let batter rest for 15mins.
  4. Preheat a flat bottomed non stick pan on the hob on medium heat, drop 1 tablespoon of batter onto the pan, wait until bubbles form all over the pancake, flip it over and cook for another minute or so until golden. Continue until all the batter is used up.
