Prepare dough for basic flaky pie crusts. Bring to the boil and cook gently and slowly until it turns to a rich, reddish caramel, then add the sliced apples with lemon and the apple juice. Add the apple to a large heavy based pan, along with the sugar, cinnamon and two tablespoons of water. Cook the apple in the pan, whilst stiring, over a medium heat for five minutes.

- Arrange the sauteed apples on top of the almond dream, and bake the tart for 50 minutes in a 180℃ oven. While it's still hot, brush the top with apricot jam which has been passed through a sieve to remove any solid bits.
- Once the tart has cooled down, remove it from the pan and brush on another layer of apricot jam. Optionally sprinkle some powdered sugar on the rim to make it look pretty.
Add the apple to a large heavy based pan, along with the sugar, cinnamon and two tablespoons of water. Cook the apple in the pan, whilst stiring, over a medium heat for five minutes. After the five minutes, stop stiring and add the pan lid and leave to 'simmer' for another five minutes. Allow to cool completely before slicing. Pile over the base and cover with the crumble topping.
