Steps to make Cuban Chicken & Rice:
  1. Season chicken & fry in hot pan till browned on both sides. Set aside
  2. Add onions & Bacon & cook for 5 mins.
  3. Add herbs & spices fry for 1 min then add vinegar & cook till evaporated.
  4. Add rice cook dry for 1 min. Add stock & bring to the boil. Add chicken, peppers & beans. Cover & cook for 15/20 mins till rice is cooked. Be careful not to overcook.
  5. Remove from heat add zest, juice & herbs season to taste & serve.
