I made this Sweet Potato Cupcakes two days ago and it was the best treat for everyone at home. This recipe was adapted from my favourite book Okashi, sweet treats made with love.   1. Prepare 5 of potatoes (cooked, drained and well mashed).
  2. It’s 2 large of onions.
  3. It’s 1/4 cup of oil (for sauteing).
  4. It’s 1 3/4 cup of flour.
  5. You need 3 of eggs.
  6. It’s 1 cup of oil.
  7. It’s 2 tsp of salt.
  8. It’s 1/2 tsp of black pepper.
  9. It’s 1 of egg (beaten for brushing).
  10. Prepare 1 of Sesame seeds (for sprinkling).

Add all the carrot cupcake ingredients to a large bowl and mix thoroughly to combine. Place cupcake ingredients into a muffin tin lined with paper liners or silicone liners (like I use). Now on to make the frosting! Add your cashews and turn on until you get a chunky meal.

  1. Preheat oven to 350..
  2. Saute onions in 1/4 cup oil until golden..
  3. Combine onions with potatoes and then mix in rest of ingredients. Mix well..
  4. Spray 4 cupcake tins with cooking oil spray..
  5. Fill tins and brush with beaten egg and sprinkle with sesame seeds..
  6. Bake for 45 minutes to an hour..
  7. To garnish fry raw spaghetti in oil until brown (break each spaghetti in 3). Stick pieces into each potato cupcake.
  8. If your short in time you can just put the entire mixture evenly into a 9" x 13" pan, brush with egg and sesame seeds, bake for an hour and then cut into squares..

Sweet potatoes during the holidays are a must in our household. This time I decided to do something different other than a casserole or a pie. I used white sweet potatoes, but any sweet potatoes will do. You can eat this cake plain, topped with whipped cream, or topped with a glaze. Either way, this pound cake is delicious!
