Ingredients of Rainbow Dhokla
- Prepare of For Yellow Dhokla Batter.
- It’s 2 cups of ChanaDal.
- It’s 1 Cup of Rice.
- You need 1/4 Cup of Urad Dal.
- You need 1/8 Cup of Tur Dal.
- You need of Salt as per Taste.
- Prepare 2 Tbsp of Green Chillie Ginger Paste.
- Prepare 4 Tbsp of Oil.
- Prepare 1/4 Tsp of Haldi Powder.
- It’s of For White Dhokla Batter.
- You need 2 1/2 Cups of Rice.
- It’s 1 Cup of Urad Dal.
- You need 1/4 Cup of Semolina.
- It’s of Salt As Per Taste.
- It’s 3 Tbsp of Oil.
- You need 2 Tbsp of Green Chillie Ginger Paste.
- It’s of Other Ingredients.
- It’s 1 of /2 cup Beetroot Juice (Grind1 Beetroot in blender by adding some water and strain it with the help of a strainer).
- Prepare 1/2 Cup of Green Chutney (Coriander Chutney made using coriander, mint, salt, lemon juice, green Chillies, ginger. Grind all ingredients to a smooth paste.).
- You need 4 Tsp of Eno (1 Tsp per layer).
- It’s 4 Tbsp of Curd for fermenting.
- It’s of For Tempering.
- You need 1 Tsp of Mustard Seeds.
- It’s 1 Tsp of Sesame Seeds.
- It’s 2 Tbsp of Oil.
- Prepare Leaves of Few Curry.
- Prepare Pinch of Asafoetida.
Rainbow Dhokla step by step
- Soak ingredients for Yellow Batter and White Batter in separate containers for 2 to 3 hours. Grind them to smooth paste add 2 Tbsp Curd in each Batter and let it rest for 2 to 3 hours for fermenting..
- Add salt, Oil, Green Chillie and Ginger Paste to both the Batters and mix well. Divide Yellow Batter into two portions. Add Haldi to one portion of Yellow Batter and Green Chutney in another portion. Mix well to get Yellow and Green Batter..
- Divide White Batter into two portions. Add Beetroot Juice to one portion and mix well to get Pink Batter and White Batter..
- Take pink batter and 1 Tsp Eno mix well and transfer the batter to a Microwave Proof pan if making in Microwave. If making on gas transfer it to a deep container. Cook the 1st layer for 2 to 3 minutes till it's 80 % done. In Microwave cook on Hi for 2 minutes..
- Add 1 Tsp Eno to Yellow batter and pour it on pink layer. Microwave on Hi for 2 minutes. For those who are cooking on gas cook for 2 to 3 minutes. Cook till the 2nd layer is 80% done..
- For the 3rd layer. Add 1 Tsp Eno to the Green Batter and pour over the previous semi cooked layers. Repeat the cooking process as above two layers..
- For Final layer. Add 1 Tsp Eno to white batter and pour it over the green layer. Cook on Hi in Microwave for 5 minutes till it's completely cooked. Test it with a toothpick or knife..
- Let it cool for 15 to 20 minutes. Unmold the rainbow dhokla..
- Temper it with Mustard, Sesame, Curry Leaves, Green Chillies. Cut them in pieces. Rainbow Dhokla is ready to serve..
