- Prepare 1/4 cup of canned chickpeas.
- You need 1/4 cup of diced red tomatoes, pulp removed.
- Prepare 1/4 cup of canned red kidney beans/chickpeas.
- You need 1/4 cup of pomegranate.
- You need 1/4 cup of mix bell pepper.
- It’s 2 tbsp of chopped spring onions.
- It’s 1 tbsp of chopped coriander for garnishing.
- You need 1/2 tsp of dry mix Italian herbs.
- It’s For of salad dressing:.
- It’s 1 tbsp of vinegar.
- You need 1 tbsp of olive oil.
- You need 1 tsp of crushed pepper.
- It’s 1 tbsp of honey.
- You need to taste of Salt.
- It’s For of green chutney:.
- Prepare 1/2 cup of mint-coriander leaves mix.
- It’s 1/4 tsp of cumin seeds.
- It’s 2 of green chillies.
- You need 2 of garlic cloves.
- You need 2 tsp of lemon juice.
- Prepare to taste of Salt.
Rainbow Pasta Salad Jar step by step
- Chop all the veggies..
- Mix all the ingredients given for the dressing, whisk it well..
- Grind all the ingredients given for the chutney by adding little water.
- Boil both the pasta one by one as per the instructions given on the packet.
- Take elbow shaped pasta in a bowl, add 1 tsp green chutney, mix it. Mixing chutney is optional..
- Canned rajma and chickpeas need to be drained and washed. If not using tinned ones, soak them overnight, boil with a little salt, drain and use it..
- You can assemble your salad in layers in a mason jar, pour the dressing on top, sprinkle some herbs and chill it. OR mix all the ingredients in bowl, pour dressing, mix it, garnish with dried herbs and fresh coriander..
