- Prepare 1 piece of ginger (julienned).

- Pre-heat the oven 230 degree C.
- Prepare fish by gutting, taking out gills and cutting fins&tails (or ask fish monger to do them). Clean inside and outside the fish thoroughly..

- Brush olive oil inside throughout the fish and brush Sun flower oil (or other high heat oil) outside the fish. Sprinkle sea salt and pepper on both sides of fish.
